Asked about Grandma pie, Cristy Lombardi, a server at Uncle Louie's Pizza in Franklin Lakes, answered with a question: "Do you know what it is?" Many people, she pointed out, don't. Lombardi herself admits she was unfamiliar with it before she began working at Uncle Louie's a little over a year ago. "I never had one. I couldn't believe how good it is."
If you too are not familiar with this New World pizza and its close cousin, the Sicilian, allow me to help you out. Unlike traditional pies, Grandma and Sicilian pies are square or rectangular in shape. They are baked in oiled black pans. However, Sicilian pizza is much more bready with dough over an inch thick as opposed to Grandma's more svelte carb-loaded content.
