Carla Bolin, who operates two Angelo's Fresh Markets in the Chicago suburbs, opened a third Italian specialty boutique grocery/restaurant called Angelo's Prime in Schererville, Ind. The market carries "the best of everything," according to a local report, which includes truffle butter, prosciutto, wild caught fish, fresh-baked Turano bread, olive oils, homemade dry pastas and freshly made prepared foods. The 2,200-square-foot store also carries the complete Sartori cheese line and locally raised meat, including Meats by Linz from Calumet City, Ill.

Bolin noted in the local news story that she purposely chose to place her store in close proximity to several supermarkets to capture shopping traffic. "We're a small, boutique market," she said in the news article. "You come to us for the good stuff. They [competing supermarkets] have the staples. We have the good meats, Italian cheeses and pasta."
