Chef Bottura to open soup kitchens in Turin and New York

Award-winning Italian chef Massimo Bottura on Wednesday said he plans to open two more of his unique soup kitchens in Turin and New York, following the success of the Refettorio Ambrosiano project launched for Expo. The Modena chef of 'La Francescana' fame made his announcement after accepting a special award from the Italian Farmers' Association (CIA), one of Italy's two main farmer groups, at Rome's Campidoglio.


Bottura, who called the Refettorio Ambrosiano "a gift of beauty to fragile souls", designed the soup kitchen project in collaboration with Catholic charity Caritas. The soup kitchens aim to reduce food waste by calling on renowned chefs to create dishes made from leftovers.
