Postino WineCafe opens in LoHi with patio views and Italian eats

The new restaurant Postino WineCafe, which opens today in Lower Highland in the former Denver Book Binding Co., came to town because of connections. The owners, Lauren Bailey and Craig DeMarco of Arizona-based Upward Projects, met David Birzon, CEO of Snooze, when he opened a Snooze next to their restaurant in Phoenix.

"We wanted to come to Denver; we're big fans," DeMarco said. "David had already looked at this (LoHi) space but decided to go to Union Station, so his real estate agent showed it to us, and we loved it." It was perfect for their mission of transforming old buildings with lots of rich history into modern wine cafes. The first Postino, opened in 2001, is housed in the historic Arcadia Post Office Building.
