The Sons of Italy in Bellaire is once again continuing its annual tradition - making 1.5 tons of sausage for the Undo's Upper Ohio Valley Italian Heritage Festival. Members of the Sons and area volunteers gathered in the kitchen Tuesday morning to prepare its famous homemade sausage. "We don't use any fillers, we don't use any chemicals, it's all good, safe, processed and it's fresh,” Sons President Bill Ault said.
First, they cut up the meat, add seasoning with secret ingredients, grind the meat and stuff the casings. Each person has a role in the process. "There wouldn't be a Sons of Italy 754 in Bellaire without these volunteers,” Ault said. “They are the hub of the Sons of Italy organization. "We'll be in the neighborhood of 3,000 pounds. That's normally what we do for the festivals."
