Expect to see some chef knives along with the fabric scissors at one of the world’s top fashion schools. Polimoda draws students from over 70 nations to Florence, Italy to study style and design for clothing — and now they are launching their first Food Styling course to impart those same skills to chefs plating their main courses.
“There are amazing chefs around the globe that know how to use meat, fish and seasonal ingredients,” says Roberta Marcenaro Lyon, CEO of IMARK, who helped design the course. “But very often their dishes lack style because no one taught them thesecrets. Aesthetics are a luxury we don’t want to miss when we are dining.”
