Italian Cheese Consortium Seeks to Fortify American Parmesan Regulations

The Parmigiano Reggiano Cheese Consortium is responsible for determining the proper usage of the term “parmesan,” which can only be used when cheese is made using artisan and natural methods. These methods are established in the product regulations and in the strict specification for Parmigiano Reggiano Protected Designation of Origin (PDO).

The Consortium promotes traceability for its distinctive Parmigiano Reggiano, widely recognized as the “King of Cheeses,” in order to guarantee to the consumers they are getting the food they asked for. “Our strategy is to try to exclude every fake Parmigiano Reggiano in sight,” noted Nicola Bertinelli, President of the Parmigiano Reggiano Cheese Consortium.
