Restaurateur Michael Stillman will open a Denver location of his popular New York restaurant, Quality Italian, later this year in the $70 million Halcyon hotel at 245 Columbine St. in Cherry Creek North. Michael Stillman grew up in the restaurant business — his dad, Alan Stillman, founded TGI Fridays and Smith & Wollensky.
Stillman developed various steakhouse concepts, starting with Quality Meats, a rustic New American steakhouse, and then adding Quality Italian and Quality Eats in New York's West Village, which focuses on off-cut meats where no steak is more than $30.
