Pasta alla Puveriello: the “wrong” carbonara loved by Eduardo De Filippo

Some dishes become part of our daily life by surprise. Or at least, this is what happened to me and the pasta alla puveriello, a sort of “carbonara sbagliata” adored by the great Eduardo, but that I had never heard about until I came across an article from the always-useful Gambero Rosso. By the way, if you read Italian, go check out their website: it’s not only full of recipes but also of very interesting historical and cultural info about Italian food.

I am sure I am not the only one who has never heard about this simple, yet tasty pasta dish, whose name translates as the poor person’s pasta, and that Gambero Rosso presents as a “carbonara made wrong,” mostly because that’s solid clickbait, considering the popularity of carbonara itself. But to be honest, pasta alla puveriello is not really that similar to its more famous Roman cousin.
