The Center for Italian and Italian American Culture will host a special dinner featuring the cuisine of Calabria, Italy from 1 to 4:30 p.m., Sunday, Feb. 21, at Divina Ristorante, 461 Bloomfield Ave. in Caldwell, owned by Chef Mario Carlino.
The inclement weather date is Sunday, Feb. 28. Carlino's philosophy is that a meal must be satisfying but light, a rare and difficult balance. Carlino attended culinary school in Salerno, Italy, working in both Germany and Italy before coming to the United States. Carlino keeps returning to Italy for inspiration, so that he can continue to add innovative choices to his menu.
