A few summers ago my wife and I attended a cooking class where the subject was making fresh pasta. It turned out to be a pleasurable evening thanks to a copious flow of wine and the shared camaraderie of the eight or so attendees, who were treated to a delicious meal crafted by their own hands.
For some time afterward, we would spend weekend afternoons making pasta in our kitchen and pairing it with a few simple tomato sauces. But our enthusiasm began to fade as the labor-intensive process of pasta making weakened our resolve. Eight pairs of hands in a kitchen classroom make light work of pasta production, whereas a duo working in a home kitchen can be worn down in short order.
