Vace Italian Deli has rightfully earned a following for its pizza, which flouts standard practice by putting the tomato sauce on top of the cheese. But when I recently wandered into the Cleveland Park location, I decided to forgo the pleasure of the pie and try something new.

Let's just say this: The spinach focaccia ($3.50) will put up a good fight in vying for your affections. "It's not too complicated," said Diana Calcagno, daughter of Vace founders Valerio and Blanca Calcagno. The recipe is her father's, featuring two thin, crisp and golden layers of focaccia around a gooey spinach filling that includes garlic, mozzarella and provolone. It's the perfect thing to pick up for a light lunch or on-the-go snack. If it's not warm out of the oven, the shop will reheat it. You really should take them up on the offer.
