The critically acclaimed and fan favorite pizzeria Paulie Gee's in New York just announced the location of its long-awaited Chicago shop, in Logan Square at 2451 N. Milwaukee Ave., near Logan Boulevard.
Before you raise your pizza rivalry pitchforks, these are not New York-style pies. Owner, pizza maker and namesake Paul Giannone says his style is "Neapolitan inspired."
But how Giannone tops his Old World, wood-fired crusts is decidedly New World. Take his already cult classic Hellboy, what Giannone recommends as your introduction to his pizzas. Fresh mozzarella, Italian tomatoes, and Parmigiano-Reggiano cheese meet American heat with Berkshire soppressata piccante salami and Mike's Hot Honey, a Brazilian-style chili pepper-infused honey.
