Looking onto the Sandhills prairie of Nebraska, Casa Bovina has fused Italian fine dining with heartland heritage since opening in 2020. Located on the outskirts of Lincoln, the restaurant offers ranch-to-table, northwestern Italian cuisine alongside a Wine Spectator Award of Excellence–winning wine list that features Barolos, Barbarescos and more from acclaimed wineries in Piedmont and beyond.
Casa Bovina owner Shane Peed tapped Zach Midgett, previously a sous chef at Grand Award winner the French Laundry in Napa Valley, to be executive chef in 2022. Midgett introduced the traditional French brigade de cuisine system to Casa Bovina, which he learned while working under Thomas Keller.
