A new Italian-themed restaurant is coming to Denver's hot and fast-developing River North neighborhood. Dio Mio, which will serve experimental, handmade pasta dishes, is set to open in a 1,500-square-foot space at 3264 Larimer St. this fall.
It's the brainchild of chef Alex Figura, who also owned the now-shuttered Lower48 Kitchen, and Spencer White, sous chef at Black Eye Coffee. "I think people these days are gravitating towards the low-pressure fast-casual option," White said when asked about the restaurant's format. "We are going to be able to provide the quality of product you would find at fine dinning restaurant at a cheaper price because we will not be full service."
