Il segreto dei cannoli siciliani sta tutto nella ricotta. Se è buona, e soprattutto fresca di giornata, il risultato è garantito. Altrimenti nemmeno il più bravo pasticcere del mondo riuscirà a offrire ai suoi clienti un dolce all'altezza della sua fama, quella del secondo dessert italiano al mondo dopo l'irraggiungibile tiramisù.
Ecco perché fuori dalla Sicilia è sempre più difficile gustare cannoli doc: la ricotta di pecora non si trova da tutte le parti, senza contare che le pecore non mangiano certo la stessa erba in giro per il mondo. Il sapore cambia, diventa più semplice usare derivati dal latte di mucca, per non parlare di chi opta per creme che niente hanno a che fare con l'originale.
