È pasta-mania a New York. L’ultima sfida dei ristoratori italiani è già una tendenza: per differenziarsi nel mercato newyorchese, tutti alla ricerca di format che rappresentino la novitá nel mercato. La pasta è indubbiamente il piatto italiano più famoso e apprezzato dagli americani, ma oggi quello che conta è il cambiamento nella tradizione.
A fare da apripista nel 2012 è stato Giovanni Rana, che con il suo Pastificio e Cucina ha portato la pasta fresca a tavola al Chelsea Market con tanto di laboratori per imparare a fare ravioli e tortellini. Segue nel 2015 Spaghetti Incident, il ristorante di Emanuele Attal, Ettore Pardossi e Giovanni Gentile nel Lower East Side.
