Born and raised in Greece, George Pappas always had a dream of doing a modern take on *Italian* classics. "I always wanted to do something with an Italian concept. I believe the Italian cuisine is the closest to Greek cuisine," he said. "This is something a little more contemporary fresh and trendy."
