Phoenix's most famous pizzaiolo Chris Bianco has never shied away from making changes within his restaurant group. Last year the James Beard award-winning chef closed Roland’s Café Market Bar — the restaurant he opened with the owners of fast-growing taco shop Tacos Chiwas — after less than a year, opting instead to turn the historic building that housed the restaurant into a second location of his sandwich shop Pane Bianco.
Now, he's preparing to switch things up at that location just east of downtown Phoenix once again. In the coming weeks, Bianco will relocate his highly regarded upscale Italian restaurant Tratto into the 103-year-old building on Van Buren Street just east of 15th Street.
