
That’s-A-Some Italian Ristorante had been part of downtown Poulsbo’s restaurant scene for more than three decades. The ownership group behind Dalla Baia, its successor, is already eying a similar time horizon. The owners of the new Italian bistro have talked about the long game, said Sandy Kolbeins, who is part of that group alongside husband-wife pair Cecilio and Grisel Topete.
“You think of that place, when you walked in and it looked like it was straight out of the '80s … it would be an honor to be in that situation as well,” Kolbeins said. Former proprietors Tom and Marie Pelland stepped away from That’s-A-Some last year, and Dalla Baia – Italian for “by the bay” – opened last month after extensive renovations to the old location, which sits a short walk from Liberty Bay just off Front Street.
