The owner of Hawaii's sole Russo's Coal-Fired Italian Kitchen in Ewa Beach is looking to open up at least two additional locations on Oahu, Maui, Kauai and the Big island over the next 12 to 18 months.
"With Hawaii's growing economy and room on the islands for more of our authentic Italian options, the state offers access to promising locations," said Chef Anthony Russo, who opened up his first Russo's New York Pizzeria in 1992 and subsequently established its upscale Russo's Coal-Fired Italian Kitchen concept.
