Thanks to a recent discovery developed in collaboration with the University of Naples Federico II, Mozzarella di bufala campana PDO (buffalo mozzarella PDO from Campania) will soon be sold in new packs that will take the place of plastics and polystyrene used until now for the packaging and shipping all over the world of this typical Italian curd cheese.
The material at the base of these new packs is eco-friendly, recyclable and less expensive than the current ones. It is called peptide, a natural protein able to bind both to the plastic material, such as a thin film or a tray, and to intercept and destroy the microorganisms present in the liquid wrapping mozzarella.
