Lorenzo Polegri calls himself "the Etruscan chef" and has written a highly entertaining cookbook under that name. He's a born showman, obviously enjoying himself as he demonstrates to our tour group how to make perfect pasta, Etruscan-style.

We're seated around tables at Ristorante Zeppelin in beautiful Orvieto where he also gives cooking lessons to international foodies, and we're all feeling relaxed as we sample a glass or two of the local Orvieto Classico.
