Legend has it that when Alice Waters started her now iconic Chez Panisse restaurant in California in the early1970s, she couldn't find flavourful and diverse varieties of leafy greens to serve. Ever enterprising, she and her friends began smuggling seeds into the US from trips to France and Italy,turning her backyard into a small farm.
