It’s more than a café, it’s more than a bakery. And for folks who love Italian delicacies, a taste of Tuscany awaits them at Farinolio, a new eatery opening on Wednesday in Summit at 12 Bank Street. “Farinolio is more than just a café bakery,” owner Francesco Colbertaldo said. “It’s an idea, it’s a concept — it’s a way to welcome people to my culture. I grew up in Florence (Italy) and it was something I wanted to share with other people in the U.S.”
Colbertaldo noted, “the basic idea was the 'la schiacciata,' the flat bread we use to make sandwiches. That concept evolved into something a lot bigger and more complex as we started to conceive the idea and actually started to operate a business when we opened.”
