Donned in a black chef coat, Jeremy Pappalardo ducked into the kitchen at Molo, his brand new restaurant venture at 987 Bay St. in Rosebank with pal Joe Guastavino. About 10 minutes later, he stepped through the double doors into a wood-lined dining room with a pair of dishes.
The first one, shrimp cocktail served as three whole prawns, came over crushed ice. "I like the natural beauty of the shrimp itself. We're so used to getting just the tail, I thought it was a nicer presentation," said the chef. Plus, that's how it would be served in Italy, he added.
