Toast. It may just be the world's most gloriously humble and satisfying food. It can comfort — buttered toast. It can nourish — toast with peanut butter and jam. It can impress — garlic rubbed and olive oil doused toast with fresh tomatoes and basil. The latter, Italian bruschetta, (pronounced broo-SKET-ah) is not only one of Italy's most beloved snacks but is also one of its most copied.
Here in America, we happily nosh on the simple bread and tomato combination. But we take it further by adding meats, cheeses and vegetables, creating our own enticing varieties of bruschetta.
