To wit: In the north, Piedmont and Lombardy produce rich, creamy dishes and hearty stews. Italy's breadbasket, Emilia-Romagna, is renowned for its meaty sauces, wholesome lasagna, and Modena's syrupy-yet-savory balsamic vinegar.
