When thinking about menu changes for the summer season, King's Highway executive chef Gregorio Calderin brought light, Italian and refreshing options to the diner's table. The restaurant at Ace Hotel and Swim Club in Palm Springs launched a new summer menu Wednesday with new dishes and twists on old recipes.
"We're trying to make the menu a bit lighter, since the weather is so hot here ... make it fun and interesting for everyone," Calderin said. The Orecchiette pasta with dandelion pesto, shiitake mushroom, shaved snow peas and cashews was inspired by Calderin's previous trips to Italy.
