• Hot Dish: Linguine in clam sauce from Antica Trattoria in Bonita Springs • Price: $17 • Description: Chef-owner Antonio Scotto starts this deceptively simple dish with a splash of good olive oil, a dozen clams harvested from Pine Island, fresh parsley and two kinds of garlic.
"I have the raw, minced garlic," Scotto said, scooping a spoonful of it into his pan, "then I have my roasted garlic, which I roast with Granny Smith apples for the extra sweetness." Scotto adds a splash of white wine. He builds his sauce with chopped, wild-harvested clams for extra meatiness and depth.
