The World's Best Restaurant: A Conversation With Top Chef Massimo Bottura

“It is all about the emotions,” begins Massimo Bottura, waving his arms about passionately. “You don’t come to Osteria to have a big plate of lasagna; you come there to experience something bigger,” says the maverick chef. He is referring, of course, to his famous three-Michelin star restaurant Osteria Francescana ranked first on the 2016 World's 50 Best Restaurants list.

It is in Modena, north Italy – the city of ‘fast cars and slow food’ as anyone you meet from the surrounding Emilia-Romagna will likely tell you. The region produces some of Italy’s most prized ingredients – Modena balsamic vinegar, parmigiana-reggiano… – and even more prized sports cars. Maserati and Ferrari have factories here and Enzo named the 360 Modena after the city he was born in.
