Between 1880 and 1920 Italian immigrants flooded the shores of the New World. The United States was home to many of these new arrivals. Most of the Italian wave was from Sicily and the south of Italy. They came to start a new life in America and wanted to assimilate into their new homeland.
While they held onto their heritage and traditions they adapted their lifestyle and cuisine to what was available in their new homeland. Italian-American cuisine is a result of new ingredients combined with old family recipes. Above all they considered themselves Americans.
