Taròz is a traditional dish from Valtellina (Lombardy region), made with green beans, potatoes, onion, and Valtellina Casera PDO cheese. The word Taroz in dialect means blend (tarare = to blend).

Taròz is usually served as an appetizer or as a side dish alongside local salumi such as Bresaola from Valtellina PGI. 

INGREDIENTS 

2 medium potatoes

10 oz green beans, washed and trimmed

3 oz onion, chopped

2 tbsp Extra Virgin Olive Oil

7 oz Valtellina Casera PDO cheese, diced

2 oz Grana Padano PDO, grated

8 tbsp unsalted butter

1 clove of garlic

ground black peppercorn 

METHOD 

Peel and wash the potatoes, boil them in a pot of salted water and cook until fork-tender.

In the meantime, boil the green beans in another pot of salted water and cook until fork-tender. Drain.

In a large skillet, soften the onion in olive oil, add the green beans, and sauté for 5 minutes.

Drain and dice the potatoes, add them to the skillet. Mash the potatoes and green beans with a wooden spoon or fork.

Add the diced Casera Cheese, the grated Grana Padano, and mix until well blended.

In a medium skillet, brown the butter with a garlic clove.

Place the Taròz on a serving plate, pour over the browned butter and serve sprinkled with ground black peppercorn.
