Chef Zamir Kociaj, 43, and his brother Andi, 35, own and operate Firenze Trattoria, a tiny three-year-old restaurant in the heart of Salem.
The brothers, as charismatic and knowledgeable as Food Network hosts, were boys when their family moved to Florence, the heart of Tuscany, from Tirana, the Albanian capital. Zamir worked his way up in the Florentine restaurant business before moving to Boston in the early 2000s and opening Trattoria Tuscana in the Fenway, before rents there skyrocketed.
