That first bite of a Brother's Sicilian square and Grandma slice yield a remarkable taste and textural sensation. Since 1975, the Giove family has turned out these pie recipes from their corner parlor with remarkable consistency. And those matters figured into Brother's win in the Advance's 2017 Best of Staten Island Awards. Bite into one of those thick squares from a Brother's Sicilian pie and experience crunch on the very bottom of the slice, the pillow-y fluff of dough between mozzarella and a zesty tomato sauce that has a mouthfeel unto itself.
As for Brother's Grandma version, also a square presentation, find its comparatively thinner crust slightly caramelized. The pizza maker applies sauce and cheese more modestly on a Grandma slice. And, rightly so as the latter wants to show off its more delicate, pleasantly crunchy crust. Impressive on their own, it is unusual to hear patrons order toppings on either the Sicilian or Grandma pies.
