Chef Antonio Mermolia and entrepreneur are two capatostas, an Italian expression meaning a volitional and stubborn type, someone who takes a different path despite knowing it will not be an easy one.
"Our chosen path is the Italy of the South, an auteur South that has still to be explored," explains Mermolia, "In particular I focused on dishes that can be found daily in the South, not those from the restaurants, but dishes that grandma or mom used to make when I got back from school: as a potato salad with vinegar, onion and bread to which I then added the octopus for example. In the simplicity of these recipes, I find a great depth".
