Just as the food service business has evolved on Staten Island so has Lou Marfoglio, a chef who currently anchors himself in Seaview at Daddino's Grand Ballroom at Colony Hall. And with his broad background in the industry, Chef Lou hopes to shape the way Staten Island eats -- one massive food gathering at a time.
Along with on- and off-premise catering, Lou organizes a Tuesday food truck gathering at the Staten Island Mall just outside of Shake Shack as part of an eight-week program. This coming Tuesday, Sept. 25 from 1 to 8 p.m., adventurous food types can experience the lobster rolls at Cousin's Maine Lobster, a new "Little Italian Truck" from Clemenza Casserta Jr. of Hell's Kitchen fame and a Venezuelan food truck, Cachapas y Mas On Wheels which represents a restaurant in Manhattan.
