Pizzeria Acqua e Farina opens in Syosset

Despite the panoply of possible toppings, pizza requires only four ingredients. Two of them, water and flour, are name-checked by the Syosset pizzeria Acqua e Farina. (The other two are salt and yeast, “sel e lievito.”). At first glance, it looks like your run-of-the-mill slice shop, but then you see the wood-burning oven and hear the Italian accent of owner Luca Pizzuti.

One thing you’ll see here and at no other Long island pizzeria: a wall devoted to photographs of the owner with various members of the Bush family. Pizzuti, it turns out, also owns Roma Pizza in Kennebunkport, Maine, where President George H.W. Bush and his family spent their summers. He developed a close relationship with the former President and first lady. (In fact, Pizzuti spent the summer in Maine; the Syosset shop, which opened in the spring, was closed from June to August.)
