Meat-sandwich lovers are in luck—restaurants from Roman Candle Baking Co. in Portland, Oregon, to Publican Quality Meats in Chicago are doing fine riffs on the Italian combo, that classic sub layered with cured meats, cheese, and veg. But one of the finest comes from Court Street Grocers in Brooklyn, where owners Eric Finkelstein and Matt Ross took more than two years to develop their perfect Italian.
