When Tommy Byrd opened Tommy's Italian American Grill in 1992, the local dining industry might as well have been Mars compared to what's since popped up to eat on this red-dirted patch of planet Earth.
Undaunted by time's unflinching trigger-finger, Byrd recently took a deep breath and walked away from a lucrative seat within the cozy confines of a successful restaurant group to go it alone and pull a Dr. Frankenstein on his eponymous concept that closed almost a decade ago.
