At around 9 pm, in the frescoed rooms of Palazzo Lante, in the via Monterone, near Piazza Navona, in Rome, the Missionary Workers of the Immaculate start chanting the Ave Maria. It is the prayer sung by the workers that run the Eau Vive, a restaurant that specializes in French, international, and fusion cuisine: the religious choir welcomes with its dancing moves the restaurant's guests, before they are served some soupe à l'oignon, a traditional French dish, or foie gras with toast, quiche lorraine, beef fillet with green pepper and flambéed Dauphine potatoes with Cognac.
The menu also has a touch of exoticism, with dishes such as chicken with onions and fried bananas. The wines are from Burgundy. For the Roman Catholic Church's Jubilee celebrations this year, the restaurant gives a 5% discount to the pilgrims visiting Rome in the Year of Mercy.
