We're celebrating all things Italian this month onGoodtaste.tv. Fitting that October is National Pasta Month, as well as the birth month of Columbus himself! I have some timeless recipes, how-to videos and more authentic eats from big names, beginning with Lidia Bastianich. I've worked with Lidia several times (once in MY kitchen) and find her to be an incredibly gifted instructor, not to mention chef!
Up first, a recipe Lidia shared that she prepared for Pope Francis on his recent visit– a steamed Lobster Caprese Salad,"Caprese di Astice e Burrata." Heirloom tomatoes, creamy housemade burrata and steamed Maine lobster. It's pretty fabulous! The Pope was also served a seasonal Pear and Pecorino Filled Ravioli. This delicate and quite simple ravioli is a lovely way to enjoy the pairing of pear and cheese.
