Joyous occasions around the dinner table served with authentic Italian dishes - recipes for which were passed down three generations - are what Elisa Pignato holds close to her heart. After a lifetime of cooking traditional Italian dishes like spaghetti with white clam sauce, chicken cacciatore, and pasta fagioli by memory, Pignato has decided to write them down in her first cookbook she's calling, "A Taste of Naples," to keep them in the family and share them with Italian cuisine lovers alike.
The former Pascack Valley resident's 100-year-old recipes are a part of the Mediterranean diet, which, according to Pignato's nutritionist, Dr. Robert Pastore, who wrote the book's foreword, is a diet rich in fruits, vegetables, seafood, nuts, fish, poultry and legumes.
