Sarah and Zak Baker, the operating partners of Pizza Man, plan to open their own restaurant and pasta shop serving Italian street food late this year, where Juniper 61 now operates in Wauwatosa. It would be an Italian-style pastificio, or pasta factory, serving food and drink at 6028 W. North Ave. It also would sell fresh pasta to prepare at home.
Juniper 61 remains open. The sale of the building is not yet final, the Bakers said, and their new restaurant wouldn't open before December if all does go as planned. Cameryne Roberts and Sarah Jonas opened Juniper 61 at 61st and North in December 2008. Roberts declined to talk about the proposed deal Friday but said the restaurant that the women own in Bay View, Lulu, is unaffected.
