Twenty feet of wall had to be knocked out to deliver it. Trusses made of the same kind of steel used on NASA launch pads had to be built into the floor to hold it up. It's a massive rotating brick pizza oven and it's in the former location of the Mad Dog Saloon, 4395 S. 76 St.
Uncle Paulie’s Brick Oven Pizzeria could open as early as the first week of July, said Jack Riccobono, who owns the new restaurant with his brother Dominic and business partner Scott Williams. A grand opening will be held later. The massive rotating brick oven that eliminates hot spots lends a special flavor and texture to pizzas, Riccobono said. The rotating oven is so new it's only now starting to be used in Italy, "where pizza making is literally an art," he said.
