Sapori Italiani, a European-style pizzeria run by one of the most prestigious chefs in North America, will open to the public Monday. The restaurant, opening in the former home of Vesuvius Wood-Fired Pizza at 1620 S. Kellogg Ave., has a menu of meat and cheese boards, salads, calzones, stromboli, paninis, pastas and pizzas, generally run between $9 to $15 per entree. The pizzas, all of which are 12 inches wide, come in both regular and gluten-free crusts.
Owner Rino Baglio said he has spent the past several weeks modeling the guest area with new paint, tables and a new serving counter, which doubles as the kitchen. Customers will be able to see the entire process of their food being prepared from the foyer. The restaurant will open for the first few days in “soft open” mode, but will be open for all its usual hours and serve its full menu. Baglio said he’s delaying the formal grand opening celebration until May 5.
