MGM Springfield has unveiled more food options for its August 24 debut. A restaurant called "Cal Mare" will call Springfield home in nearly two months. It'll have a Coastal Italian menu featuring fresh New England seafood with flavors of Italy's coast. Cal Mare's menu will focus on premium ingredients and simple preparations, ranging from rustic handmade pastas and brick-oven pizzas to whole grilled fish and more.
Chefs Michael Mina and Adam Sobel said what excites them most about being on the east coast is having access to all the amazing seafood. "What's special about this Cal Mare versus Cal Mare in California is obviously product, product, product," said Mina. "Every dish has a story, every dish has inspiration and every dish has ingredients that are meticulously sourced," Sobel added.
