Jonathan Welch met chef Tom Schnapp when the pair worked together at the Farm Table Restaurant in Bernardston. Welch, who was the general manager then, said, "I knew how talented he was."
That flair was in Northern Italian and Mediterranean cuisine. He wants his new restaurant Osteria Vespa to be the canvas for that specialty. "It's always been a great passion of mine," Schnapp said of that kind of cuisine. He grew up in Boston and lived for a time in the North End. He has also traveled to Europe.
