Mimo still feels a little bit like a secret. The new Italian spot from chef Fernando Rios and wine guru Mike Sammons lurks in back of Tlacquepaque Market, so you have to zig-zag past the center’s colorful facades to find it. The hours reinforce that hard-to-get feel. Mimo is only open for lunch from Thursday through Saturday right now, although dinner service may begin May 11 — depending on the arrival of point-of-sale equipment to process transactions.
It can’t happen soon enough for me. A recent lunch made the heart of this particular East Ender beat faster, as I marveled over my unforgettable salad and pasta, sipping a bottle-fermented Frizzante, Bele Casel Col Opuo, that put ordinary Prosecco to shame.
