Rumored for almost a year, the replacement for Sirio Ristorante at Aria will indeed be New York's hit, retro Italian-American restaurant Carbone.
The Maccioni family's restaurant occupied the space across from Jean Georges Steakhouse and Michael Mina's American Fish, now Bardot Brasserie, for five years before shuttering in December. Now, a very, very expensive remodel will take its place.
